Our head chef and co-owner, Bilarddi Carteli, was trained in Italy (Bologna and Tuscany) as well as in California. Bilarddi worked as a chef throughout Italy as well as in the United States. He follows the methodology of Professor Pellegrino Artusi, known as the food god of Italy, believing it’s not the recipe that makes a meal delicious; but, the imagination that combines the ingredients.
